We don’t know what to feel about being a mom until we become one. Moms do so much, it’s nice to have a day to recognize and appreciate everything we do. It is nice to get surprise from your kids and partner but let's be honest, we need to help them a little so we can really enjoy our day . How to plan a special Mother’s Day dinner that’s hassle free for ourselves, kid-friendly, and delicious? We’ve selected several dinners that moms and families will enjoy and best of all, they can be done a day before, easy to reheat (by the kids and your significant other, of course), and make great leftovers so everyone can enjoy an easy meal tomorrow too!
Tips for a Smooth Mother’s Day Dinner
Pro Tip One: Plan ahead. Shop and prep the day before. While mom relaxes, grab the kids and have them help prepare a delicious dinner in advance. Getting all the prep and assembly done on Saturday means a quick and easy dinner on Sunday with less clean up!
Here is the healthy and delicious Mother's Day menu we put together for you:
Quick Appetizer
Endive Salad- This dish takes 3 steps [and 3 mins] to prepare and it is so delicious you will be surprised how much your kids love it!
Peel each leaf from the endives, lay on the plates, sprinkle or shave parmigiano cheese on the endives, and drizzle balsamic vinegar dressing on top.
Pre-Made Main for Easy Heat Up
Roasted Vegetable Lasagna from Epicurious – This hearty, veggie-packed dish is elegant enough for Mother’s Day and only gets better overnight. It’s also the perfect recipe for using up any vegetables you already have!
Don’t Forget the Dessert!
Tiramisu is one dessert that tastes best a day old. It adds instant fanciness to any dinner. We modified the recipe to a baby-friendly version.
Lemon Tiramisu
2 egg yolks + 300 g mascarpone cheese + ½ cup of sugar. Whisk on medium speed until the mixture is fluffy. Zest 2 lemons and mix with the mascarpone. Dip store-bought ladyfingers quickly in lemon juice. Layer the ladyfingers and mascarpone in a deep dish. Store in the refrigerator for one day. Dust with cocoa powder before serving.
*Replace egg yolks with whipped heavy cream if you have concern about raw food.
Pro tip 2: Keep mess to a minimum. Preparing the meal a day before means fewer dishes and counters to wipe on Sunday but there are other ways to cut down on cleaning too. Babies and toddlers are messy eaters. Be proactive about preventing mess by using a long, wide bib with a pocket like Miniware’s Roll & Lock silicone bib which protects clothing (less laundry!) and stops spills before they hit the floor. Our dishes feature a detachable suction foot to keep plates, bowls and cups in place. Miniware products are dishwasher safe, so no need for hand-washing. The best of all, today is the day you can leave those last minutes clean up to your partner and kids. Time for a bubble bath with candle light!
Protip 3 : Make it Special This is a special day even if we are dining at home! Engage the kids in creating the perfect atmosphere. Older kids will love designing a menu and playing waiter while even young children can help place linens and tableware. Bring out the candles and don’t forget to dress up! Both mom and kids will love the special touch. Just remember to give them a big kiss, and snuggle attack to let them know how nice they made you feel.
